Suman sa Ibos

What I miss most from my childhood is suman – suman sa ibos to be exact. Suman is made from sticky rice wrapped in young coconut leaves. It is not hard to cook because you just have to mix the ingredients then boil.  The hard part is the wrapping. You see, it takes a certain skill to wrap a suman and a technique that can not be learned by reading online. You have to see someone wrap a suman yourself but that doesn’t guarantee you’ll learn it. You have to try it with your own hands until you get the hang of it.

The reward is a food that can be eaten right off the fire or stored in the fridge and eaten a few days after. I like it eaten with mangoes and dipped with sugar.
